Isolation and characterization of flavour nodes of Nigerian local spices. Formulation of enhanced glutamic acid production from fermented leguminous/oilseeds as a substitute for nature-identical glutamate-base-spices. Isolation and characterization of plant fibre (cellulosic and lignocellulosic) as a composite for the production of biodegradable plastics for food packaging. Current profession
Current professional activities type:TeachingI am a lecturer at the Federal University of Technology, Owerri, Imo State Nigeria in the Department of Food Science and Technology, and a member of the University Senate. I teach food chemistry, food instrumental analysis, food safety and quality management, food product development inter alia. I am also involved in the development of the departmental food safety curriculum within the University system. I mentor up-coming food scientists and actively involved in career development and advocacy. My mentoring scope covers both graduate and undergraduate students and a host of younger colleagues. I am an FSSC 22000 certified auditor, involved in the teaching and training of food safety management and quality control of food systems, building capacity of those in the public sector (regulatory bodies) and private enterprises.
