Stellamaris is passionate about Food and Nutritional Biochemistry, more specifically banana starch, its modification, and how it can be applied in the formulation of functional foods.

Stellamaris is also an assistant Lecturer at the departmental of Biochemistry, where she teaches industrial biochemistry, nutrition and nutritional disorders, food, and nutritional biochemistry
