I am presently working on an underutilized cereal known as Acha (Digitaria exilis). It is an early maturing grain grown in West Africa. It will be processed into diverse products and/or incorporated in some local cereal product at certain concentrations. Microbiological and biochemical changes will also be studied and products obtained will be subjected to organoleptic assessment and shelf life studies.
